  • 450 g white wheat flour T65
  • 50 g whole rye flour
  • 350 g water
  • 15 g fresh yeast (or 7g of dry yeast)
  • 9 g salt
  • Weigh the flour, yeast, salt and mix everything with the water at room temperature. The dough should be slightly sticky.

  • Flour the bottom of another bowl/bowl. Form a homogeneous dough ball with the dough and put the ball in the floured bowl.

  • Cover with a towel and leave to rest for 1h30

  • After 30 minutes, put the casserole and its lid in the oven.

  • Preheat the oven with the casserole at 250Β°C for 1 hour

  • Immediately close the lid and put the pan back in the oven.

  • Lower the oven temperature to 225Β°C.

  • After 20 minutes, remove the lid (surprise guaranteed!). Leave to cook for another 20 minutes.

  • After 40 minutes of cooking in total, remove the bread and let it cool on a wire rack for 1 hour before tasting.
